I discovered this possibility a year ago when I was convalescing at a friend’s house (shoulder surgery).
you don’t need a recipe — just crack an egg into a little dish (doesn’t have to be straight sided like a ramekin)
(you also don’t need to butter the dish to prevent the egg from sticking)
season to taste and in one minute you will have what is in effect an egg over easy — firm whites and a lovely runny yolk.

I don’t know why you need to microwave an egg dish. One of the easiest and quickest things to cook is eggs in almost any form — fried or scrambled, and yes even an omelette is fast if you’re doing one as plain as in this recipe. I like mayo and have a spicy one that I would add to a breakfast sandwich, but in the putting together stage not in the cooking stage. My breakfast this morning took about 5 mins to make. 1 egg fried in butter, yolk broken, salt and pepper to taste. 1 toasted English muffin (toast while egg is cooking). Smear of refried beans (leftovers from cinqo de mayo dinner) on one half of toasted muffin, top with egg, slice of cheese and muffin top and enjoy. My refried beans were spicy so no need for spicy mayo. Delicious! You can change this up so many ways depending on what you have on hand and how much time you have. Any kid of bread or toast. Bacon or ham instead of beans. Mixed greens. Sliced tomato. Or just the egg. A plain fried egg sandwich on good bread can be sublime,
I like good food — by which I mean whole foods that need to be prepared at home. And I like to cook, so I consider myself lucky because those two things mean I eat fairly healthfully. Buying local food means I can feel good about supporting local farmers and businesses — an added bonus.
I have never liked the ‘foodie’ designation, I’ve always felt that it has a derogatory quality — as in food snob. Those who eat very fancy dishes, complicated to cook and usually found at high end restaurants. That is not my bag at all. And I will eat prepared dishes but I get them from local, trusted sources not fast food chains.
living alone after a shoulder replacement I was glad to learn of a way to use one bowl and one spoon to get my morning protein. I did drop a slice of whole-grain bread in the toaster but was perfectly happy not to spread anything on it or make any other preparations, though yours sound delicious.
that way there was no pan or cooking utensils to wash, perfect for when you only have one arm ;-)
washing my hair is a lot easier now and I don’t wake up at 4a with a throbbing shoulder

Seriously, this week was plagued with timing issues. But I have fixed cron (see the table on the About page for all the improvements and fixes) and so I expect those issues to be a thing of the past. Except for nap time, of course.
